Smoked Meatloaf

Meatloaf is good but smoked meatloaf is even better.  Today I’m firing up a family favorite, adding a spicy twist with a bit of Spanish chorizo as well as my meatloaf special ingredient – ground crispy onions.

Ingredients

2 lbs. ground beef

5 ounces ground chorizo

1 egg, beaten

½ cup breadcrumbs

½ cup ground crispy onions

2 tbsp. BBQ dry rub seasoning

¼ cup milk

¼ cup BBQ sauce

 

Instructions

Preheat smoker or grill to 300 degrees, adding 2-3 chunks of your favorite smoking wood or 6-7 Kingsford Smokehouse Style Briquets.  Mix together ground beef, chorizo, egg, breadcrumbs, ground crispy onions, dry rub and milk in a medium mixing bowl.

Place mixture on to an oven safe tray and shape into a loaf.  Place meatloaf on to the smoker or grill, cover and allow it to cook for approximately 45 minutes until the internal temperature reaches 160 degrees. Brush barbecue sauce on to the meatloaf and allow it to cook an additional 5 minutes.

Remove, slice and serve.
