Tangy Carolina barbecue has a reputation for greatness that precedes itself. As one of the original homes of excellent barbecued meats, real barbecue heads know that Carolina is a dream destination to visit. Carolina BBQ is distinguished by two sub-regions, North and South, with shredded, chopped, and pulled pork being the protein of choice. Northern Carolina BBQ is made with the "whole hog" where pieces of the pig are mixed together and doused in vinegar and spices. Southern Carolina BBQ has slightly different sauces but again, uses pork as the main meat of choice.
