QUAU Comes Up Big in Georgia

The Kingsford Points Chase recent rolled in to Canton, Georgia and Mike and Beth Wozniak of team QUAU came away one step closer to an overall victory. Here’s our good friends at KCBS with a complete recap.
The quiet north Georgia town of Canton was host to the Cherokee Pignic where the barbecue team QUAU was looking to lock down more Kingsford glory. QUAU, the defending Kingsford Points Chase Champions, left Canton with another Kingsford win and with one event left, QUAU has their eye squarely on going back-to-back in the Kingsford Points Chase Championship.
Mike and Beth Wozniak form the team called QUAU. The Wozniak’s take pride in always working to make themselves better at their craft.
“We’re always making changes,” says Wozniak of the QUAU strategy. “We’re always trying to make our barbecue better. You have to in this business. Everyone is getting better!”
Wozniak believes that hard work is always a little less difficult when the setting is beautiful around you. The beautiful north Georgia backdrop for the Cherokee Pignic is a big draw for QUAU.
“Its such a nice location at the Pignic,” said Wozniak. “It’s in a beautiful country spot that’s backed up to the woods with a river right behind it. And down south they take care of the cooks. They had a dinner for all the cooks as well as two breakfasts!”
While the scenery may have been beautiful, everything wasn’t all sunshine and roses for QUAU. A team that is daring enough to make changes along the way knows to be prepared for any and all possible surprises.
“We were trying a couple new things,” describes Wozniak. “With our chicken we were trying a new technique to make it more tender. In the end though, it turned out to be tougher. Plus we also cooked a whole Berkshire shoulder and it didn’t end up pulling like I wanted it to.”
That being said, the Wozniaks were still able to pull out the Kingsford win with strong performances on the other side of the score sheet.
“We had really good pork,” explains Wozniak. “That, plus a really good brisket, carried us through to a decent finish.”
With the Cherokee Pignic win in hand, QUAU will now look ahead to a strong finish at the Jack Daniel’s Invitational in hopes of repeating as the Kingsford Points Chase Champions for 2012.
