Black and Blue Chuck Steak Sliders

  • 6 petite chuck steaks (approx. 1.25 lbs)
  • 3 tbsp Steak seasoning or BBQ dry rub
  • 6 slider buns, toasted
  • 6-8 ounces blue cheese crumbles

Heat grill to high.  Season petite steak on both sites with steak seasoning or dry rub.  Grill approximately 4-5 minutes on each side, adding blue cheese crumbles to the tops for the last two minutes and close the lid to allow cheese to heat.  Remove steaks from grill, place on buns and serve.

Husk Grilled Corn

  • 6 ears of corn unshucked, soaked in water for 30 minutes
  • 6 tbsp butter
  • 1 cup grated Parmesan cheese
  • 1 lime cut into eighths
  • 2 tbsp chili powder

Prepare grill for high heat cooking.  Place corn on the grill and cook for 20-30 minutes turning approximately every 5 minutes until husk is nicely charred.  Remove from the grill, remove the husk and silk and serve.  Invite guests to add butter, grated Parmesan, chili powder and lime or any combination of the four.

Grilled Poundcake, Pineapple and Ice Cream

  • 1 store bought poundcake cut in to 1 inch slices
  • 1 can of pineapple slices, drained
  • 1 pint of your favorite ice cream
  • Chocolate syrup

Prepare grill for medium-high cooking and oil grates well (note a bunched up paper towel soaked in cooking oil and held with tongs is a simple yet safe way to oil the grates).  Place poundcake and pineapple slices on the grill and allow to lightly brown, approximately 4 minutes per side.  Remove and place one slice of poundcake, top with 1-2 grilled pineapple slices and a scoop of ice cream.  Drizzle with chocolate syrup and serve.
