Grilled Sweet Potato Casserole

Thanksgiving wouldn’t be the same around my house without marshmallow topped sweet potato casserole.  Today we’re adding a new dimension to this dish by grilling the sweet potatoes.

5 large sweet potatoes

½ cup heavy cream

4 tbsp. unsalted butter

1 tsp. Kosher salt

2 eggs, beaten

3-4 cups mini marshmallows



Preheat grill for medium-high heat cooking.  Scrub sweet potatoes and pierce on all sides with a fork.  Place sweet potatoes on the grill, cover, and allow to cook for approximately 45 minutes until soft, turning periodically throughout the cooking process.

Remove sweet potatoes from the grill, cut in half, and remove the soft center with a spoon.  Add the sweet potato, heavy cream, butter, salt and beaten eggs to a large mixing bowl and stir to combine.  Place the mixture in to a large heat-resistant baking dish, top with mini marshmallows, and place the baking dish on the grill.

Cover and allow to cook for approximately 30 minutes until thoroughly heated and the marshmallows are lightly browned and melting.  Remove from the grill and serve.
