Grilled Shrimp and Grits

Shrimp and grits is one of those classic Southern dishes with about a thousand variations. We add one more by grilling the shrimp.
1 cup stone ground grits
4 cups water
3 tbsp butter
¼ cup crème fraiche
Salt and pepper to taste
1 lb uncooked shrimp, peeled and deveined
2 tbsp Cajun dry rub
Bamboo skewers, soaked in water for at least 15 minutes
Prepare grill for medium-high heat cooking. Place a medium saucepan on the grill grate, add water and allow to heat for 10-15 minutes. Add grits and simmer for approximately 10 minutes until water is full absorbed. Add butter, crème fraiche and salt and pepper to taste.
To prepare the shrimp, place 6-8 on each skewer. Season both sides with Cajun dry rub. Place on the pre-heated grill and cook 3-4 minutes per side until they turn pink. Poor grits into a shallow bowl, top with shrimp and serve immediately.
