Grilled Pickled Fruits and Vegetables

Taking inspiration from pitmaster Chris Lilly’s grilled pickle recipe found here, today we’re firing up some grilled and pickled okra, tomatoes and zucchini.
4 small zucchini sliced in half, grilled then quartered
2 cups okra, grilled whole
4 vine-ripened tomatoes halved, grilled then quartered
6 garlic cloves peeled
3 tsp. peppercorns
6 sprigs thyme
2 cups white wine vinegar
1 cup water
½ cup sugar
2 tbsp. salt
Preheat grill to medium. Place small saucepan on the grill grate and add garlic, thyme, peppercorns, salt sugar, vinegar and water. Simmer until salt and sugar have evaporated, approximately 5 minutes. Remove from heat. Add grilled vegetables to mason jars, cover with liquid mixture, add lids and refrigerate for at least 72 hours before serving.
