Grilled Lamb Loin Chops with Mint Pesto Sauce

My family loves lamb and this is one of our favorite recipes. I especially enjoy using loin chops because they look like little t-bone steaks, only more lamby…

GRILLED LOIN LAMB CHOPS WITH MINT PESTO
Ingredients
1 lb. lamb loin chops
Juice of two lemons
¼ cup extra virgin olive oil
1 tbsp. Dijon mustard
3 cloves crushed garlic
1 tsp. salt
½ tsp. ground black pepper
Mint pesto sauce (recipe follows)
Instructions
Blend together lemon juice, olive oil, Dijon, garlic, salt and pepper. Place lamb chops in a zip top bag, cover with marinade, seal and refrigerate for 2 hours. Preheat grill to high. Remove chops from marinade, rinse and pat dry. Grill approximately 4 minutes per side for medium-rare. Remove the chops from the grill, top with pesto and serve immediately.
MINT PESTO
Ingredients
½ cup mint leaves
½ cup parsley
2 tbsp. grated Parmesan
2 tbsp. pine nuts, toasted
2 garlic cloves, minced
½ tbsp. lemon juice
½ cup extra virgin olive oil
Instructions
Combine all ingredients in a blender and blend until smooth.
