Grilled Cupcake Cones with Candied Bacon

Recently I was playing around with some grilled dessert ideas and I turned to my 9-year-old daughter who is the baking pro in our family.  The result was a batch of sweet and savory chocolate cupcakes with cream cheese frosting and candied bacon.

And while these cupcake cones were kid friendly, you can also replace the water that is called for in the cake mix with bourbon, Kahlua or another one of your favorite liquors.

Grilled Cupcake Cones with Candied Bacon

Ingredients

  • One 18.25 oz. box of dark chocolate fudge cake mix
  • One can pre-made cream cheese frosting
  • 1/3 cup of your favorite liquor (optional.  If using simply replace the water with liquor when preparing the cake mix)
  • 10 flat bottomed ice cream cones
  • 6 strips of candied bacon (recipe follows)

Special tools:  One pizza stone

Instructions

Prepare grill for medium high heat cooking (approximately 350 degrees).  Place pizza stone on the grill while it pre-heats.  Prepare the cake mix according to instructions, replacing the water with liquor if desired.  Fill ice cream cones 2/3 full and place them in to a cupcake pan using tinfoil to keep the cones secure.  Place the cupcake pan on the pizza stone, and cover grill.

Allow the cupcake cones to bake for approximately 20 minutes until a toothpick can be inserted in to the center of the cupcakes and comes out clean.  Remove from heat and allow the cupcakes to cool before frosting and topping with slices of candied bacon.

Ingredients

  • 1 lb. bacon
  • 1/2 cup brown sugar
  • 1/4 cup honey

Instructions

Prepare grill for medium-high heat grilling.  Place bacon strip on the grill grate, drizzle honey over the top of the bacon slices and sprinkle liberally with brown sugar.  Close the grill and allow the bacon to cook until crisp, approximately 15-20 minutes.  Remove the bacon using a spatula as the honey and brown sugar mixture will be extremely hot.  Allow the bacon to cool then cut in to bite-sized pieces.
