Grilled Bacon Wrapped Baby Vidalia Onions

One of the best things about his time of year is the return of local farmer’s markets and the countless options they offer for grilled seasonal fruits and vegetables.  Yesterday I was browsing one of our local markets and came across something that was new to me – Lil’ Bo’s petite sweet Vidalia onions.  Just as sweet as full-grown Vidalia onions, these golf ball sized variations are perfect for fire roasting whole then served alongside virtually any main course.

Note, if petite Vidalia onions are not available, the following recipe for grilled bacon wrapped baby onions can adapted for use with bacon wrapped slices of full sized Vidalias.

Grilled Bacon Wrapped Baby Vidalia Onions

Grilled Bacon Wrapped Baby Vidalia Onions

(serves 4-6)


¼ cup white balsamic vinegar

¼ cup extra virgin olive oil

1 tsp. Kosher salt

1 tsp. dried rosemary

1 tsp. dried basil

1 tsp. thyme

2 garlic cloves roughly chopped

2-3 lbs. petite Vidalia onions, trimmed of root end and tops*

½ lb. bacon slices cut in to thirds


* Alternatively, peel a fill sized Vidalia and cut in to quarters or eighths before progressing with the rest of the recipe.



Combine balsamic vinegar, olive oil, salt, dried herbs, and garlic in a bowl and stir until the salt has completely dissolved.  Place petit onions in a large zip top bag, add the marinade and seal the bag, removing as much excess air as possible.   Refrigerate the marinating onions for at least four hours or overnight.

Marinating Baby Vidalia Onions

Prepare grill for medium-low heat cooking (approximately 300-325 degrees).  Remove onions from the marinade and pat dry with paper towels.  Wrap each onion with a third slice of bacon leaving the tops and bottoms of the onions uncovered and pierce the bacon and onion with a toothpick at the end of the bacon slice to keep it in place during grilling.

Place the bacon wrapped onions on the grill, cover, and allow them to cook for 30-40 minutes until the bacon is browned and crisp and the onions have softened.  Remove onions from the grill and serve immediately.
