Grilled Artichokes with Lemon

Artichokes are one of those vegetables that can be intimidating to cook but thanks to this simple-to-follow grilling recipe from Chef John Besh’s new cookbook “Cooking From the Heart: My Favorite Lessons Learned Along the Way” from Andrews McMeel, you’ll be firing up some tasty artichokes in no time!

Grilled Artichokes with Lemon

Serves 4

Ingredients

4 medium artichokes

3 lemons

Olive oil

Salt

Freshly ground black pepper

Leaves from

1 sprig fresh rosemary, chopped

Leaves from 2 sprigs fresh thyme, chopped

4 green onions, chopped

 

For me, the best way to celebrate the beauty of artichokes (preferably the elegant, long-stemmed, purple-tinged variety you find in Provence) is to slice them lengthwise to reveal their beautiful interiors. Then, brush with oil and lay on a grill to gently char.

 

Instructions

1. If you’re lucky enough to find young artichokes with long stems, peel the skins from the stems. Bring a large pot of salted water to a boil and squeeze in the juice of 1 lemon. Add the artichokes and simmer until they are almost tender, about 7 minutes; drain. Slice in half lengthwise and scoop out the choke with a spoon if using large artichokes.

 

2. Prepare a charcoal or gas grill, or heat a grill pan over high heat. Drizzle both sides of the artichokes with olive oil, season with salt and pepper, and put them directly on the grill, cut sides down. Grill until they are slightly charred and tender, about 5 minutes.  Remove the artichokes from the grill, shine them with olive oil, give them a squeeze of lemon juice, and scatter the rosemary, thyme, and green onions on top. Serve with lemon wedges.
