Grilled Apple and Jalapeno Coleslaw

Just in time for Memorial Day weekend, we’re putting a grilled twist on a traditional barbecue side dish – coleslaw.  Grilled cabbage and apple are combined with jalapenos and red bell pepper to create a sweet and spicy side kissed with just the right amount of smoke.

Grilled Apple and Jalapeno Coleslaw

Ingredients

One head of cabbage, cored and cut in to eighths

2-3 red apples, cored, halved and cut in to ½ inch slices

½ red bell pepper, diced

2 jalapenos, cut in half lengthwise and thinly sliced

Southern slaw dressing (recipe follows)

Instructions

Prepare grill for medium heat cooking.  Grill cabbage over direct heat for 5 minutes per side until char marks are visible.

Place apple slices on the grill and grill for 2-3 minutes until one side is lightly charred.

Remove the apples and cabbage from the grill and place in the refrigerator for at least 10 minutes to stop them from cooking.  Finely chop the apples and cabbage; add bell pepper and jalapeno slices; toss with dressing, and serve.

 

Southern Slaw Dressing

Ingredients

1/4 cup apple cider vinegar

1 cup mayonnaise

1/2 teaspoon pepper

2 tablespoons sugar

1/4 teaspoon mustard powder

Instructions 

Mix all ingredients and refrigerate until ready to use.
