Creole Mustard Marinade

September 28, 2012

I spent my college years in New Orleans and when I see any recipe that brings me back to those days, I jump.

mustard marinade in jar

So while browsing the pages of Weber Smoke, the latest cookbook from the fine folks at Weber grills, I found something called a creole mustard marinade and I knew who dat was made for.  Dat was a recipe made for me.

I ran to the local Winn Dixie, made me da groceries dat I needed for dis dish plus some lagniappe for da cook, and it was on.  I would suggest chicken or a mild fish for this marinade, though pork chops would be nice as well.

3 tbs Creole mustard

3 tbs extra virgin olive oil

3 tbs red wine vinegar

2 tbs Worcestershire sauce

2 tsp minced garlic

1 tsp dried thyme

½ tsp Kosher salt

½ tsp ground black pepper

In a small bowl, whisk all of the ingredients until smooth.
