Cilantro Lime Beef Satay

Grilled beef skewers get a Southwestern makeover in this Cilantro-Lime Beef Satay recipe from Robyn Medlin Lindars of GrillGrrrl.com.
This recipe combines all my favorite ingredients- lime juice, cilantro, and jalapenos. I guarantee this will make it to your top 5 marinades once you make it. The longer the meat marinates, the more flavor and cilantro-lime goodness!
12+ bamboo skewers (soak for 30 minutes beforehand) x
1lb. beef sirloin, cut into 1” wide pieces, 1/4” thick slices
Cilantro Lime marinade (recipe follows)
1/3 cup soy sauce
1/4 cup fresh chopped cilantro
2 tbsp. lime zest
1 tbsp. lime juice (the juice of one medium sized lime)
4 tsp. fish sauce
1 1/2 tsp. dark brown sugar
1 tsp. canola oil
3 cloves garlic, chopped
Puree all marinade ingredients (soy sauce, cilantro, lime zest, lime juice, fish sauce, oil, sugar and garlic) with a hand mixer or food processor until it forms a paste.
Combine marinade and beef in a non-reactive container and marinate in the refrigerator for 4 hours. Thread the beef strips onto pre-soaked bamboo skewers. Preheat a charcoal grill to medium high heat, about 350-400 degrees.
Grill the skewers for 3 minutes on each side or until char marks form. These are thin slices of meat so they don’t need much time on the grill.
They are also great paired with grilled with pita bread or warmed Naan (you can warm them on the grill). Low fat sour cream and lime juice mixed with chopped parsley make a great dipping sauce with these skewe
