Three Cheese Grilled Corn Casserole

I am a huge fan of corn casserole and this Thanksgiving I decided to take it to the next level with grilled fresh corn.

Three Cheese Grilled Corn Casserole


6 ears fresh corn, unshucked

8 oz. package grated three-cheese blend

8 oz. cream cheese

1 14.75 oz. can creamed corn

½ tbsp. Kosher salt

2 tsp. ground black pepper

3 eggs, whisked

1 cup panko bread crumbs



Preheat grill for medium-high heat cooking, approximately 400 degrees.  Place un-shucked corn on the grill and cook for approximately 20 minutes, turning frequently until husks are completely charred through.

Remove the corn from the grill, shuck, and cut kernels from the cob into a large mixing bowl.  Add the cheese blend, cream cheese, creamed corn, eggs, salt and pepper and stir until well blended.  Pour mixture into a large heat resistant baking dish, top with panko bread crumbs and place onto the grill.  Cover and allow the casserole to bake for 30 minutes.  Remove from the grill and serve.
