BURGER OF THE MONTH: JALAPENO-PIMENTO CHEESE SLIDERS

May 3, 2012

Our ongoing tribute to the burger continues with a slider topped with delicious jalapeno-pimento cheese.

Ingredients

1lb ground beef, preferably an 80/20 blend

Salt and course ground pepper

Jalapeno-pimento cheese (recipe follows)

8 mini burger buns

Jalapeno-Pimento Cheese

1 pound sharp cheddar, grated

1 jalapeno (ribs and seeds removed), minced

1 7-ounce jar pimentos, drained

¾ cups mayonnaise

½ tsp hot sauce

Combine all ingredients and mix until well blended.  Refrigerate at least one hour to allow the flavors to combine.

Instructions

Preheat grill to medium high. Gently form ground beef into eight 2-inch patties.  Sprinkle both sides of burger patties liberally with salt and pepper.

Grill burgers until thoroughly cooked through, approximately 4-5 minutes per side. Place burgers on the bottom buns, top each with approximately 2 tbsp jalapeno-pimento cheese.  Add top bun and serve immediately.
