Burger of the Month: Green Eggs and Ham(-burger)

Another month has come to an end in grilling country and that means it’s time for the latest entry in the Grilling.com Burger of the Month Club!
Taking a page from one of my favorite pieces of childhood fiction, I call this the “Green Eggs and Ham(-burger),” the perfect combination of beef, ham, egg and cheese plus a pop of color and flavor from the cilantro pesto. What’s not to love?
Green Eggs and Ham(-burger)
1 lb ground beef, preferably an 80/20 blend
Salt and course ground pepper
2 tbsp butter
4 large eggs
Cilantro pesto (recipe follows)
8-12 thin slices of ham
8 oz grated Cojita cheese
4 brioche buns, split and toasted
Preheat grill to medium high. Gently form ground beef into four patties. Sprinkle both sides of burger patties liberally with salt and pepper. Grill burgers to desired level of doneness, approximately 4-5 minutes per side for medium rare. While burgers are grilling, heat a skillet over medium high heat. Add butter. Crack three eggs in to the skillet and cook over easy. Place burgers on the bottom buns, top each burger with 2-3 slices of ham, a fried egg and Cojita cheese. Spread the cilantro pesto on the top bun and place on burger.
2 cups roughly chopped cilantro
4 cloves garlic, peeled
½ tsp chopped deseeded jalapeño pepper
1/3 cup toasted almonds
¼ cup Cojita cheese
2 tbsp lime juice
¼ cup olive oil
Salt and pepper to taste
Add cilantro, jalapeño, almonds, cheese and garlic to a food processor or blender and pulse to blend well. Slowly add in olive oil and lime juice until pesto reaches your desired consistency. Add salt and pepper to taste and chill until ready to use.
