Burger of the Month Club: Chimichurri Burger

Chimichurri Burger recipe

Four weeks ago, we introduced our first ever Grilling.com “Burger of the Month” entry, the Frito Pie Burger. Next up we’re putting a Spanish twist on the classic meat and bun with a Chimichurri Burger, a combination of a tangy sauce, buttery cheese and crisp onion.


Chimichurri Burger


1lb ground beef, preferably an 80/20 blend

Salt and course ground pepper

Chimichurri sauce (recipe follows)

8 oz Manchego cheese, sliced or shaved

1 red onion, thinly sliced

4 hamburger rolls, split and toasted

Preheat grill to medium high. Gently form ground beef into four patties. Sprinkle both sides of burger patties liberally with salt and pepper. Grill burgers to desired level of doneness, approximately 4-5 minutes per side for medium rare. Place burgers on the bottom buns, drizzle with Chimichurri sauce, top with a slice of red onion, cheese and top bun and serve.

Chimichurri sauce

½ cup roughly chopped parsley

4 cloves garlic, peeled

½ tbsp red pepper flakes

Half lemon, juiced

3 tbsp red wine vinegar

½ cup olive oil

Salt and pepper to taste

Add parsley, garlic, red pepper, lemon juice and vinegar to a food processor or blender and pulse to blend well. Slowly add in olive oil to create a smooth, vibrant green sauce, remove and chill until ready to use.
