Burger of the Month: Pickled Ginger Slaw and Sriracha Lime Mayo Burger

It’s national burger month and we’ve got an Asian twist on the traditional backyard burger, adding a pickled ginger and sesame slaw and Sriracha-lime mayo to really take it over the top. I was recently provided some wonderful American Kobe (Wagyu) beef patties from the fine folks at Steakhouse Elite for testing purposes and created this burger as a compliment to its rich, deeply marbled taste.
Pickled Ginger and Sesame Slaw and Sriracha Lime Mayo Burger
4 6oz. Steakhouse Elite Wagyu burger patties (you can substitute 80/20 ground beef if Wagyu isn’t readily available but it definitely makes this burger special)
Salt and pepper
Pickled ginger slaw (recipe follows)
Sriracha lime mayo (recipe follows)
4 hamburger buns, lightly toasted
Prepare grill for high heat cooking. Season burgers liberally with salt and pepper and grill for 4-5 minutes per side for medium rare. Spread Sriracha-lime may on the top and bottom buns, place burger patties on the bottom bun, top with pickled ginger and sesame slaw, add the top bun and serve immediately.
Pickled Ginger and Sesame Slaw
12 oz. package broccoli slaw
¼ cup pickled ginger roughly chopped
¼ cup rice wine vinegar
2 tbsp. sugar
1 tbsp. sesame seeds
1 tsp. sesame oil
1 tsp. salt
Combine all of the ingredients in a medium sized bowl and refrigerate for at least an hour so all of the ingredients have time to meld.
¼ cup mayonnaise
1 tbsp. Sriracha hot pepper sauce
1 tbsp. lime juice
Combine all of the ingredients in a small bowl and refrigerate until ready to use.
