Burger of the Month: Brat Burger Deluxe

Fire up the grill and call the kids to the table ‘cause it’s once again time for the Grilling.com “Burger of the Month.” Today we’re taking a page from my Wisconsin roots and creating the ultimate brat burger featuring a homemade cheese sauce, beer and butter sauteed onions, a thick bratwurst patty and a pretzel bun!

Ingredients
1 lb bratwurst, casings removed
1 Vidalia onion sliced thin
1 tbsp butter
1/2 cup of your favorite beer
Cheese sauce (recipe follows)
4 tbsp horseradish mustard or whole grain mustard
4 pretzel rolls, split and toasted
Instructions
Preheat grill to medium high. Gently form bratwurst filling into four patties. Grill burgers until cooked thoroughly (160-165 degrees internal temperature), approximately 8 minutes per side. While burgers are grilling, heat a skillet over medium high heat. Add onions and beer. Saute the onions until the beer has evaporated and the onions are soft and have begun to caramelize. Place burgers on the bottom buns, top each burger with sautéed onions, and cheese sauce. Spread mustard on the top bun and place on burger. Serve and enjoy!
Cheese Sauce
½ stick butter
3 tbsp flour
¼ cup beer
1/2 cup grated smoked gouda
1 cup grated gruyere or cheddar cheese
3 tbsp heavy cream
Melt butter in a small pot over medium heat. Slowly add flour, stirring constantly to remove any lumps. Add beer and allow to simmer 3-5 minutes. And cheese and stir until well blended. Add heavy cream and simmer until cheese has fully melted. Keep sauce over low heat until ready to serve.
