I was first introduced to BBQ spaghetti when I came across it on the menu of a popular Memphis barbecue joint. While pasta and pulled pork may seem like an odd combination at first, it’s one of those dishes that will keep you coming back for more.
1 lb. spaghetti prepared according to instructions
2 tbsp. canola oil
½ cup diced onions
2 cloves garlic, minced
½ cup diced green pepper
2 cups of your favorite BBQ sauce
2 cups pulled pork (check out our recipe for pulled pork here)
1/4 cup BBQ dry rub seasoning
½ cup shaved or grated Parmesan cheese
Prepare grill for medium heat cooking. Add canola oil to a medium saucepan and place on the grill. Once the oil is heated and begins to shimmer, add onion, green pepper, and garlic and heat until onions and peppers have softened, stirring periodically for approximately 10 minutes. Add barbecue sauce and pulled pork to the onions, garlic and peppers. Heat until the sauce is warmed through then toss with the cooked pasta. Divide pasta into 4-6 serving bowls, sprinkle liberally with dry rub seasoning and top with Parmesan.
