Bacon Guacamole Burger

We are about halfway through the Summer and me and my family aren’t anywhere near tired of burgers! Here’s one with a little something extra from Grilling24x7.com.
This is a very difficult burger recipe. Why you ask? Well, the guacamole is SO GOOD that it takes a lot of determination and will to not eat it all before you even cook your burgers. In fact, I almost broke Mrs. Grilling24x7′s arm as she was trying to dunk a chip into the guacamole as I was photographing it. All is well now, but beware, this homemade guacamole is that good. Three simple flavors and textures are present here for this burger recipe and they work so well together: the refreshing creamy guacamole, the crisp peppered bacon, and a juicy tender well seasoned burger patty. Put these three together and your cookout will be over the top.
Make up the guacamole. If you haven’t ever made a homemade guacamole you are really missing out on one of the true gems of life. It’s one of those recipes that you can eye ball but the general ratio of ingredients is this: 4-5 soft ripe avocados, 1/2 an onion (diced), 5-6 garlic cloves (diced), 1/2 a tomato (diced), handful of cilantro leaves (chopped, about 1/4 cup), 2 T hot sauce, 1 squirt of lime juice. Simply mix everything together. Add some salt and pepper to season it. It’s worth stressing the importance of soft ripe avocados. When you are in the grocery store give that avocado a good squeeze. If it is hard, do not proceed. The guacamole will be awful. The avocado needs to be soft and tender when you squeeze it. If you are in the store and only see hard unripe avocados, don’t panic. You can still make bacon cheese burgers and perhaps you’d like to try topping the burger with a runny egg? Oh yes!
Anyway, see how easy it was to make homemade guacamole? It’s ok to take a few chips and sample it. But beware, once you start, you can’t stop.
As usual when we do burger patties, form the patties loosely, put a little dent in the center and season them well. You can use my black peppercorn burger rub recipe, or any burger blend you like. Preheat your grill to medium or medium high heat (see Chris Lilly’s tips for lighting your grill here).
Grill those burgers over direct heat and then bring them inside. It’s time to assemble this burger.
I didn’t comment on how to prepare your bacon. I think this is pretty much a no brainer. I will tell you this: baking bacon in the oven on a broiler pan is the best way (15-20 min at 400 degrees F). I do it this way and then heavily pepper the bacon. However, this will work just fine if you pan fry. Top the burger with bacon and a HUGE spoonful of guacamole. There you have it! Now’s a good time to get out those chips and finish off the guacamole.

A bacon guacamole burger with a really easy homemade guacamole recipe.

Yield: 4 Burgers and a lot of guacamole leftover
- 8 slices Thick Cut Bacon (peppered)
- 1 lb Ground beef (80%)
- 5 Avocados (soft and ripe)
- 1/2 Sweet Onion
- 5 cloves Garlic
- 1/4 cup (packed) Chopped Cilantro leaves
- 1/2 Tomato
- 2 T Hot Sauce
- Squirt Lime Juice
- 4 Potato Rolls
1. Prepare guacamole by halving the avocados and removing the seed. Scrape the inside of the avocado into a bowl. Dice the onion, garlic, tomato and cilantro leaves. Add hot sauce and lime juice and mix well. Salt and pepper to taste (about 1/8-1/4 tsp).
2. Cook bacon.
3. Grill burgers.
Assemble burger with bacon and a huge scoop of avocado.
