All American July Fourth Menu

It’s July 4th weekend and the team at Grilling.com is firing up the holiday with a host of recipes, tips and techniques, starting with an All American July Fourth menu from yours truly!

The All American Burger with Fresh Mozzarella Cheese

Ingredients

1.5lb ground beef, preferably an 80/20 blend

12 1/8 inch slices of fresh mozzarella cheese or classic American cheese cut to fit the slider buns

3 vine ripened tomatoes, sliced

12 mini burger buns, toasted

1 Vidalia sweet onion, sliced thin

1 cup Canola oil

Ketchup (if desired)

Mayonnaise (if desired)

Mustard (if desired)

1 cup of Canola oil

1 head of romaine lettuce, torn in to bite sided pieces

Salt and course ground pepper to taste

 

Instructions

Prepare the grill for high heat cooking, cleaning the grate and oiling with a paper towel soaked in Canola oil and applied to the grate using long handled tongs.

Gently form ground beef into 12 patties, approximately 1 inch thick and ¼ inch wider than the slider buns.  Season both sides of burger patties liberally with salt and pepper.

Brush each side of the onion slice with Canola oil and season with salt and pepper.

Place the onion slices (still intact with rings still joined together) on the high heat side of the grill alongside the burger patties. Grill burgers 2-3 minutes per side for medium rare and approximately 6 minutes for medium, adding one slice of cheese to each during the last 3 minutes. Grill onions for approximately 5 minutes per side until nicely colored but still crisp.

Add ketchup and/or mustard and/or mayo evenly on bottoms and tops of the slider rolls.  Place burger on the bottom buns, top each with one slice of grilled onion, one slice of tomato, romaine lettuce and then the top bun.

Grilled Lemon Slices Brûlée

Ingredients

1 lemon cut in to slices

Approximately 1 tbsp. sugar

 

Instructions

Prepare the grill for high heat cooking, cleaning the grate and oiling with a paper towel soaked in Canola oil and applied to the grate using long handled tongs.

Place lemon slices on high heat portion of the grill and cook until lightly charred on one side.  Flip the lemons and sprinkle sugar evenly over the tops.  Using a kitchen-sized blowtorch, heat the sugar until it starts to bubble and lightly brown.  Carefully remove the lemon slices from the grill and allow to cool completely before serving with your favorite cold beverage.

Southern Style Grilled Pork and Beans

Ingredients

6 15oz. cans of pork and beans in tomato sauce, drain of top liquid

1 cup Canola oil

1/3 cup of your favorite barbecue sauce

6 tbsp. of your favorite dry rub

1 ½ cups Country ham pieces, fried like traditional bacon

1/4 cup pork cracklings

 

Instructions

Prepare the grill for two-zone cooking, creating on high heat side and one medium heat side; clean the grate well and oil with a paper towel soaked in Canola oil and applied to the grate using long handled tongs.

Add pork and beans, Country ham bacon and barbecue sauce to a medium sized saucepan and place on the grill.  Allow the beans to simmer for approximately 30 minutes, moving to the cooler side as they start to bubble.  Remove beans from heat, add pork cracklings, and serve.

Grilled Sweet Corn

Ingredients

6-8 ears of sweet corn, husk on

1 cup Canola oil

3 tablespoons butter

Kosher salt to taste

Instructions

Prepare the grill for high heat cooking, cleaning the grate with a well oiled paper towel soaked in Canola oil and applied to the grate using long handled tongs.  Soak corn in water until the grill is ready.  Lay corn directly on the grill, rotating frequently until the husks are well charred and smoking.

Remove the corn from the grill and remove husks and silk.  Add butter and salt and serve.
